Ingredients:
- 1 Meaty Ham Bone
- 354 grams cups Pinto Beans, dry
- 1920 grams Water or chicken broth
- 1 large Bay Leaf
- 5 cloves Garlic, minced
- 1 large Onion, diced
- ½ teaspoon Pepper
- 1 teaspoon Kosher Salt
Instructions:
1. Begin by rinsing your meaty ham bone under cold water, ensuring it's free of any excess salt or impurities.
2. In the trusty crockpot, combine the rinsed ham bone, dry pinto beans, water or chicken broth, bay leaf, minced garlic, diced onion, pepper, and salt. Give it a gentle stir to blend the ingredients together.
3. Set your crockpot to cook on High for 7-8 hours. About halfway through the cooking time, give the beans a stir and check to see if they're covered with enough water or chicken broth. If needed, add more water to keep the beans submerged.
4. Once the beans are tender and infused with the savory essence of the ham bone and seasonings, carefully remove the ham bone and bay leaf from the crockpot. Discard the bay leaf and set the ham bone aside to cool slightly.
5. Extract any remaining meat from the ham bone and chop it into bite-sized pieces. Return the chopped ham to the crockpot and give the beans a final stir.
6. Taste the beans and adjust the seasoning as necessary, adding more salt or pepper to suit your taste.
7. Serve these hearty ham and beans with a side of crusty sourdough bread or fluffy cornbread for a meal that's both nourishing and deeply satisfying.
